1-2 boxes of mushrooms (Shitake, honshimeji, trumpet Royale and oyster)
2-3 garlic cloves, thinly sliced
2-3 chilis, chopped
Ricotta salata
2 tbs basil
2 tbs parsley
Olive oil
1 egg
Salt & pepper to taste

1. Preheat oven to 450
2. Season mushrooms with olive oil, salt & pepper
3. Roast mushrooms for about 25 minutes
4. In a heated sauce pan with oil, add thinly sliced garlic
5. Once golden, add in your mushrooms, parsley, basil and chili.
6. Allow to simmer together on medium-low for 3-5 minutes, then set aside
7. Turn up the heat and fry your egg
8. Plate your mushrooms, egg and grate with ricotta salata.
