Mr. Chow’s Chicken Satay is a top secret recipe that many restaurants have tried to recreate over the years. In fact, the coveted recipe is said to be worth over ten million dollars, so of course, I wanted to give it a try. It is said that the marinade is made so red with the use of carrot juice, which I will have to try in my next rendition, but I promise this one tastes just as good!

Here’s What You’ll Need – For 2 Servings:
For the chicken:
8 oz chicken breast (strips preferred)
Bamboo skewers
3 egg yolks
1/4 cup flour
5 tablespoons “pad Thai sauce”
3 teaspoons gochujang sauce
For Peanut Sauce:
1/2 shallot, minced
1 tablespoon butter
2 tablespoons peanut butter
1/2 pint chicken stock
1/2 pint heavy cream

1. Mix marinade ingredients together.
2. Cut chicken strips in half (1/4 inch each) and stick in skewers.
3. Cover chicken in marinade and refrigerate overnight.
4. Next day: in a heated sauce pan, fry chicken until cooked – about 4 minutes on each side.
5. Separately, simmer shallot on low for about 5 minutes.
6. Add in remaining satay sauce ingredients on medium-high, mixing regularly until a sauce forms (about 5 minutes).
7. Plate chicken, cover in sauce and enjoy!
