If you’ve heard of Saint Theo’s, then you’ve definitely heard of their viral ricotta pasta with a drizzle of Calabrian chili oil. Although they’ve taken this social media sensation off the menu, you’re not out of luck… With this recipe remake, in only 5 steps, you’ll be able to recreate it over and over again!
Ingredients:

Half box pasta
2 tbs butter
2 cups ricotta cheese
1/2 cup half and half
1/2 cup reserve pasta water
1 tsp salt
Calabrian chili oil

Directions:
1. Bring a pot of salted water to a boil. Add pasta. Allow to cook for 8 minutes, until al dente.
2. Separately, in a heated saucepan on medium, add two tablespoons of butter. Once melted, add in two cups of ricotta cheese, stir and break down cheese.
3. Add in 1/2 cup of half and half, 1/2 cup of reserved pasta and salt, stirring until a sauce forms.
4. Add in cooked pasta and mix until covered in sauce.
5. Plate pasta, top with chili oil and enjoy!
