Truly never thought cod could taste so good OR be this simple. Turns out that Nobu’s super rich, melt-in-your mouth cod is actually, incredibly simple to make. With only a few required ingredients and little prep work, I am sure this dish will quickly become a staple in your home!

3-4 5oz cod filets
1/4 cup mirin
1/4 cup sake
1/2 cup miso paste
1/3 cup sugar

1. Combine mirin and sake in a heated sauce pan. Bring to a boil.
2. Bring down to a simmer and whisk in miso paste and sugar until completely dissolved.
3. Once cooled, generously cover over cod filets in miso marinade and seal tight with saran wrap.
4. Refrigerate for 48-72 hours.
5. Wipe off any excess miso marinade and preheat oven to 400.
6. In a heated sauce pan, cook on medium for about 4 minutes on each side.
7. Bake in oven for about 8 minutes and enjoy!
