Rock Shrimp Tempura is a must-order at a Japanese restaurant, and no one does it quite like the OG Nobu. Their rendition is perfectly creamy with a little spice and I tried to replicate just that with this Recipe Remake. Enjoy!
Ingredients:

For sauce:
1/2 tsp salt
1/2 tsp white pepper
1 tsp rice vinegar
1/3 cup canola oil
1 tbs chili garlic paste
1 egg yolk
For batter:
4/5 cup flour
3/4 cup cold water
1 egg yolk
For shrimp:
Vegetable oil
1lb shrimp, roughly chopped
Lemon or yuzu juice
Scallion to garnish

1. Combine salt, white pepper, rice vinegar and egg yolk in a bowl. Very slowly, add in canola oil, mixing vigorously. Finally, add in the chili paste. Set aside.
2. Make batter in a separate bowl by combining flour, water and egg yolk.
Coat shrimp in batter.
3. In a hot sauce pan, add about 3 inches of vegetable oil and start frying shrimp for about 2-4 minutes.
4. Once all shrimp are fried, cover in sauce and top with lemon juice and scallion to garnish.
5. Enjoy!
