Street corn is my personal favorite side dish whenever I have tacos, and Tacombi’s is the best in town! Now you can make it at home… all you need is a few stalks of corn and a few other pantry staples!

4 stalks of corn on the cob
2 tbs butter
2 tbs mayo
1/2 jalapeño pepper, finely chopped
Small handful of cilantro, chopped
Chili powder
Cayenne pepper
Cotija cheese
Lime wedge

Directions:
1. Bring a large pot of salted water to a boil, add in corn stalks for 5 minutes and then remove.
2. Once corn has cooled down, slice off kernels from stalk
3. In a heated saucepan with butter, add in corn kernels and jalapeño pepper, allowing corn to brown slightly on medium
4. Turn down to simmer and add in cilantro and mayo. Taste and add more mayo if you want!
5. Add corn to a cup and top with chili powder, cayenne and crumbled Cotija cheese. Garnish with lime.
6. Squeeze lime, mix up and enjoy!
