For sauce:
2 TBS sesame paste
2 TBS chill oil
1/2 TSB crush Szechuan peppercorn
1 TBS sugar
2 TBS noodle water
1/4 cup soy sauce
2 TBS rice vinegar
Fork pork:
8 oz ground pork
2 TSB fish sauce
1/2 TBS minced garlic
1 TBS soy sauce
1 TSP minced ginger
Scallions for garnish
2 TBS olive oil or sesame oil
1/2 lb noodles

1. In a medium bowl, combine sesame paste, chili oil, crushed peppercorns, sugar, soy sauce and rice vinegar.
2. Separately, boil a pot of water and cook your noodles.
3. Once noodles are cooked, add 2 tablespoons of noodle water to your sauce.
4. Set aside noodles and sauce.
5. In a heated saucepan, add oil, ground pork, garlic, ginger, soy sauce and fish sauce. Allow to cook on medium for about 8 minutes and then garnish with scallion.
6. Assemble your Dan Dan noodles by topping with sauce and ground pork mixture. Combine and enjoy!
